Featured on the front forming a central column are four colour images of hors d'oeuvres. The top one features smoked salmon, next a triangular pastry, a green pate on a round cracker and orange fish roe on a diamond shape cracker. Author name at the bottom.

inside the book are glossy pages with text instructions and colour pictures outlining how to make a variety of hors d'oeuvres.

Historical information

'The Book of Hors D'oeuvres' by June Budgen was owned by Garry Smith during his time as an apprentice chef and when he purchased and ran The Manse Restaurant in 1988 through to 2020. The book was used as inspiration for Garry and he team at the restaurant and for his catering business. The book was first published in 1986 and reprinted three times in 1987 and again in 1988
The Manse Restaurant was opened around May 1988 by Alex and Kerry Koers in the former Congregational Church Manse building. In the early 1990s Gary Smith, who had been working as an apprentice at the restaurant, purchased the restaurant and ran it until its closure in 2020 due to COVID 19 pandemic and ill health.

Contextual Information

Part of a suit of cook books and recipes used by Gary Smith and his staff for inspiration at The Manse Restaurant. It represents the style of food that Gary served at the restaurant and through his catering business. The recipes were used by Gary when he was an apprentice chef and when he was the head chef and owner of the Manse. The book was part of a larger library of cook books and recipes purchased and collected by Gary throughout his career as a chef.
The Manse Restaurant was a popular place strongly supported by local dinners for much of its life from 1988 to 2020. It was located at 31 Church Avenue and was housed in the original Manse building for the Congregational Church.

Statement of significance

This object is part of a collection that represents the commercial history of the City of Armadale. It represents the many different businesses that have operated in the local area and how those businesses have evolved over time.
